North Fork Blue Label is our small-batch series where we take a finished whiskey and give it a second life in a different barrel. This time, we started with rye whiskey-aged four years in new American oak — the classic bourbon-style barrel that gives whiskey its color and most of its backbone. Then we moved it into a sherry cask for six more months.
That second barrel is called a "finish," and it's less about aging and more about borrowing character. The cask spent years holding sherry, and that residue — sugars, wine compounds, the wood itself — soaks back into the whiskey. Six months isn't long enough to fundamentally change the spirit, but it's plenty of time to layer in something new on top of what was already there.
Here, that means dried cherry, orange peel, fig, toasted walnut, and dark cocoa — flavors you get from sherry casks that you'd never get from oak alone.
Every North Fork Blue Label starts with a different base whiskey and a different finishing barrel, so no two releases taste alike, and once a batch is gone, that particular combination doesn't come back.
