Enchanted Forest

(Absinthe Frappe)

In a shaker:
1 oz. Trail of the Cedars Absinthe
1 oz. water
1 oz. mint simple
2 oz. half & half
Small scoop of ice
Shake until ice is almost completely dissolved
Dump into rocks glass filled with ice
Garnish with spanked mint

To make mint simple: In a pot, dissolve 2 ½ cups sugar with 2 ½ cups water. Bring to a boil. Turn off heat. Add 4 oz. fresh mint. Let steep for 30 minutes. Strain and cool for serving. (For this cocktail, we like to add a little green food coloring to the simple, after straining.)

In a shaker:
Make a “quick” simple in the bottom, stirring a small scoop of brown sugar with a small splash of water
Add 1 1/2 oz. North Fork Whiskey
3 drops aromatic bitters
Scoop of Ice
Shake and strain into chilled glass with Trail of the Cedars Absinthe rinse
Garnish with lemon twist
